Vinification

The Chardonnay brings a salty, tense attack that melts into a fuller palate, achieved through the interaction between the wine and the yeasts, amplified by a manual gesture, the “poignettage”. The initial fruit flavors (apricot and redcurrant) come to the fore. More complex notes of small chamomile flowers, verbena, and bergamot enrich the palate. The finish is very long and indulgent (toasted brioche, lemon meringue pie) and ends with an invigorating and refreshing minerality.

Fresh on the nose with very distinct citrus aromas (lemon, pink grapefruit, and zest). White flowers then blossom, before notes of nutmeg and biscuit develop, promising beautiful maturity.
